Sweet Treats: Peanut Butter Brownies
When you combine two glorious things together; you're going to end up with something special. With that my friends; I decided to try and make something that has become rather popular both here in the UK and across the pond recently; Peanut Butter Brownies.
Ingredients
Start out with a foolproof basic Brownie recipe; and then let the creativeness take over!
If you can't find a recipe; then here's one that is good for 12-16 portions:
350g good quality dark chocolate, that's broken up into small pieces
250g unsalted butter
3 free-range eggs
250g dark brown sugar
100g plain flour
1 tsp baking powder
a little bit of oil for greasing
For the Peanut Butter:
4 tbsp peanut butter or spread
Cookie dough bites (If you can't find them in your supermarket; don't worry it's not essential - but adds an extra crunch!)
Method
1. Heat the oven to 170°C
2. Lightly grease a 19-22cm square cake tin.
3. Melt the chocolate and butter in a heatproof bowl over a bain-marie.
4. Whisk the eggs and sugar together in a separate bowl for 3 minutes or so until it's smooth and fluffy.
5. Gradually fold the chocolate mixture into the bowl containing the sugar and eggs.
6. Sieve the flour and baking powder into the bowl and stir until it is fully combined.
7. Add three tablespoons of peanut butter (and the pack of cookie dough bites) to the mixture and stir well.
8. Pour the mixture into the cake tin ensuring that it is evenly spread.
9. Lightly spread the remaining peanut butter onto the top of the mixture; to create a ripple-like effect.
10. Pop it into the oven for 35 minutes or so until a skewer comes out almost clear and then it's done!
11. Remove from the oven and allow to cool completely in the tin.
12. Cut up into generous-sized portions, sit back... and enjoy!
The Verdict
Well what can I say... I think I have found another form of Brownie that I have come to adore!
First there was the humble sour cherry and walnut version; and now peanut butter has been added to the list!
